On Sunday we hosted a dessert party for our neighborhood. The tradition is to serve root beer floats, but since we were hosting, I put my foot down. I don't drink soda and I have never liked root beer floats, so I asked if I could bake treats instead. Of course they gave me the green light.

I baked up a storm! I made S'mores cookies, oatmeal chocolate chip cookies, 2 plum cakes, Dorie's chewy chunky blondies, and world peace cookies. Whew, I got tired again just typing it:) It was a lot of work, but we had a great time and everyone loved the desserts. We really have the best neighbors and friends.
Today I am sharing the recipe for the S'mores cookies. I made these for the kids, but all of the adults loved them too! They start out as a basic chocolate chip cookie with graham cracker crumbs stirred in. Then you add in mini marshmallows and Hershey chocolate bars. They really taste like a Smore's! Make a big batch because everyone will want “SMORE” of these cookies:)

S'mores Cookies

Ingredients
  

  • 2 cups all purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups miniature chocolate chips
  • 1 1/2 cups mini marshmallows
  • 2 Hershey bars chopped

Instructions
 

  • 1. Preheat oven to 375 degrees.
  • 2. In a medium bowl combine the flour, graham cracker crumbs, baking soda, salt. Whisk together. In a separate larger bowl beat together the butter, sugar, brown sugar and vanilla until creamy. Add the eggs one at a time, beating well after each addition. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. Drop by rounded tablespoon onto ungreased cookie sheet.
  • 3. Bake for 8 minutes, and remove from the oven. Push 3 to 4 marshmallows and a few pieces of hershey bar into each cookies. Return to the oven and bake an additional 3-4 minutes until fully cooked. Cool cookies on a wire rack.
